How many times have you had leftover chicken from Cote-St-Luc BBQ, Chalet BBQ, or (dare I say it) Swiss Chalet? Reheating it usually makes it dry, stringy, and flavorless. It can sit on your fridge for days wrapped in the plastic it was packaged in. Right next to it is a small cup of gravy that or may not have gelatenized overnight. All of this paints a picture for a delicious and perfect comfort food style leftover meal.

Ingredients:

Leftover BBQ chicken (white and dark are both acceptable)

Gravy

Hamburger bun (it came with your chicken order…if you ate it, use any other bread)

2 tsp. Your favorite hot sauce

2 tbsp. Ketchup

1 tsp. Canola oil

Directions:

1. Remove the chicken from the bone and discard any chewy fat. Then, break down the chicken in small pieces. The chicken will separate easier when it is cold.

2. Heat the canola oil in a small pot, then add the chicken. Cook until the meat starts to shred. Stir constantly so it doesn’t stick to the bottom.

3. Toast the bun at this stage. Add the gravy, ketchup, and hot sauce over the chicken. Stir to combine and cook until the meat is shredded.

4. Place the chicken and gravy on top of the buns and enjoy!
